Here it is, our first Raw Vegan dish. The idea for this dish came while we were shopping for groceries. At first we wanted to marinate some veggies but after we saw these beautiful organic mushrooms we decided to make a mushroom ceviche. We used Portobello and shiitake mushrooms, and to give it that distinct sea flavor we added kelp. We couldn’t believe how good it was, and we were amazed at how similar to the non-vegan ceviche it tasted. Please share it with your non–vegan friends, they will love it!
